1. SPECIALTY COFFEE
What is a Specialty Coffee? These coffees come from micro lots and are totally traceable. They are coffee without or almost defects and the cup that is obtained has unique organoleptic characteristics with qualities far superior to commercial coffees. To be considered Specialty, a coffee must obtain a score equal to or greater than 80 in the Evaluation Protocol conceived by the SCAA (Specialty Coffee Association of America).
2. GREEN COFFEE
Green coffee, in motion, speaks of its history, but few of the quality. What is coffee quality? It is the joint result of processes that allow the expression, development and preservation of the physical-organoleptic characteristics of the coffee until the moment of its transformation and consumption.
